I was over at my friend (an fellow ND) Melanie's house and she found this great almond butter cup recipe to make together. The chocolate almond butter cups were so good and easy to make that I thought I would repost the recipe. I changed the original recipe (by PaleoOMG) so enjoy!
1 cup smooth organic peanut butter (you can use almond butter as well)
½ cup unsweetened shredded coconut
1 tablespoon coconut oil
1 1/2 tablespoon maple syrup
1 cup dark chocolate chips, melted
pinch of salt
Place peanut butter, coconut, coconut oil, maple syrup and salt in a food processor and puree until smooth and well mixed.
Add a spoonful of the mixture into mini muffin tins so they are half full. Then pour melted chocolate on top of each spoonful to fill the tin. You do not need to grease the tins since there is coconut oil in the mixture.
Place in freezer for 30 minutes until set.
Use a sharp knife to pop out each chocolate peanut butter cup. Store in freezer and remove 5 minutes before eating to help soften the chocolate.
