Savoury Zucchini Patties

Breakfast can be a tricky time for those of us who cannot eat eggs. You can try this yummy recipe as a special treat to start your day off right!

 

 

Ingredients:  

  • 2 grated medium zucchinis

  • 2 eggs, beaten or egg substitute

    • Egg substitute - 2 tablespoons of ground flax seed mixed with 6 tablespoons of hot water (mixed until egg-like consistency)

  • 1/2 cup chopped cooking onion 

  • 1/2 cup chopped mushrooms

  • 1/2 cup all-purpose flour or gluten free flour (Bob’s Red Mills has a great option!)

  • 1/2 cup grated Parmesan cheese 

  • 1/2 cup shredded mozzarella cheese 

  • salt and pepper to taste 

  • 2 tablespoons oil

 

 

 

Directions:

  1. Grate zucchinis and pat them dry to remove excess moisture. Mix zucchini, eggs/egg substitute, onions, mushrooms, flour, cheese until well blended. Add salt and pepper to taste.

  2. Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls and flatten. Cook for a few minutes on each side until golden.

  3. Enjoy!
